蛋白质的另一秘密

           我们已经知道了,蛋白质是对生物体生命的形成起着决定性的作用,而且在生命这架复杂的“机器”的正常运转中也起着至关重要的作用。但是蛋白质的用途却远不止于此,它的另一秘密就是它还在人类的工农业生产和医药生产有着广泛而重要的用途。
  我们知道,动物的丝、毛(内含角质蛋白)是纺织工业的重要原料,而牛皮、猪皮、羊皮经鞣制后可成为柔软、富有弹性的皮革。今天我们身上穿的羊毛,驼绒的衣服,脚上穿的锃亮柔软的皮鞋说起来都是蛋白质的功劳呢!还有动物胶也是蛋白质,它是用动物的皮和骨熬制成的,广泛用作木材的胶粘剂。无色透明的动物胶叫做白明胶,它是制造电影胶片、照相底片的主要原材料。蛋白质在生物医学上的运用就更多了,由蛋白质制成的各种生物制剂如氨基酸、胎盘球蛋白、血清蛋白、水解蛋白和酶(如胰蛋白酶、胃蛋白酶)等都是重要的医药原料。蛋白质还可制取蛋白粘胶纤维。下面我们简单介绍一下一些蛋白生物制剂的作用。
  猪毛是一种重要的加工原料,它是一种角质蛋白质,不溶于水,但能被酸、碱等分解,生成胱氨酸和其它多种氨基酸。
  猪毛+浓盐酸胱氨酸+其它氨基酸
  现在,人们已很重视对猪毛、人发的收集,用它来制取胱氨酸等产品。制得的胱氨酸有促进机体细胞氧化和还原的功能,以及增加白血球和阻止病原菌发育等作用。它在医疗制药中被广泛用于治疗各种脱发症,也用于痢疾、伤寒、流感等急性传染病,以及气喘、神经痛、湿疹和各种中毒疾患等。
  蛋白质生物制剂是今天医学上有着重要用途的药剂。现在有大量的口服水解蛋白就是属于这一类。口服水解蛋白含有各种人体所必需的各种氨基酸,它能在肠道中被直接吸收,对于缺乏蛋白质所引起的肌体消耗和机能不全的患者能迅速有效地得到氨基酸补充。在临床医学中被广泛用于治疗营养不良、重病后体亏、妊娠及产后虚弱等。水解蛋白主要以动物的血纤维(也可用鸡毛、鸭毛等)为原料来制取。
  蛋白生物制剂的重要的另外一类是蛋白酶的制取,如胰蛋白酶。酶是一种高效的生物催化剂,不同的酶具有不同的作用,如蛋白酶只能催化蛋白质的分解反应,不能催化淀粉的分解反应。由于酶是蛋白质,因此易受温度和PH的影响,人体中的大多数酶,在37℃左右和近乎中性的环境下具有最大的作用。人类目前已发现的酶有一千多种,胰蛋白酶就是其中的一种,它主要存在于高等动物的胰脏中,能消化蛋白质,在医药上用于制取消化药(它主要从牛、猪、羊的胰脏中提取)。
  现代医学的发展已经从蛋白质及蛋白生物制剂的发展中看到了前景,现代基因技术以及分子生物学的发展必将为人类带来一个健康的未来。
